Cooking Instructions
  1. Heat the olive oil in a large skillet over medium-high heat until it shimmers, about 2 minutes.
  2. Season the sliced chicken breasts with chili powder, paprika, cumin, salt, and pepper. Add the seasoned chicken to the skillet and cook for 5-7 minutes, stirring occasionally.
  3. In the same skillet, add another drizzle of olive oil if needed and sauté the sliced red and green bell peppers and onion for 4-5 minutes.
  4. Stir in the drained black beans and corn kernels into the skillet and cook for an additional 2 minutes.
  5. Assemble the bowls by placing a generous serving of cooked rice at the bottom, then layer in the sautéed chicken, pepper, and bean mixture.
  6. Top with cheese for creaminess and fresh cilantro for brightness. Squeeze a lime wedge over each bowl.
