- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together all-purpose flour, sugar, baking powder, salt, and poppy seeds.
- In a separate bowl, mix together the milk, vegetable oil, egg, vanilla extract, lemon zest, and lemon juice until smooth.
- Gently pour the wet mixture into the dry ingredients and stir until just combined.
- Fill each muffin cup about 2/3 full with the batter.
