Preparation Steps
- In a large mixing bowl, combine 1 cup of PlantFusion Vanilla Bean Protein Powder, 1 cup of old-fashioned rolled oats, 2 tablespoons of poppy seeds, and 1/4 cup of Truvia. Blend well.
- Add the zest of 1 medium lemon and the freshly squeezed juice from that same lemon into your bowl. Stir until fully incorporated.
- Gradually pour in 1/4 cup of water while mixing. Adjust consistency until it holds together without being sticky.
- Shape the mixture into compact spheres about the size of a tablespoon, aiming for around 28 bites.
- Place the energy bites on a parchment-lined baking sheet. Cover and refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the refrigerator for up to 6 days.
