- In a large measuring cup, whisk together the vanilla Greek yogurt, sugar or sweetener, lemon juice, and lemon zest for 2-3 minutes until well combined.
- Pour the mixture into the pre-chilled bowl of your ice cream maker and churn for 20-25 minutes until it reaches a soft-serve consistency.
- If you don't have an ice cream maker, pour the mixture into ice cube trays and freeze for 4-6 hours until solid.
- Blend the frozen yogurt cubes in a blender for 1-2 minutes until smooth and creamy, scraping down the sides as needed.
- Serve immediately for soft-serve or freeze for an additional 1-2 hours for a firmer texture.
