Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together fresh orange juice, lime juice, and minced garlic. Add olive oil, chopped cilantro, ground cumin, dried oregano, salt, black pepper, and white vinegar. Blend well to create the marinade.
  2. Place the pork in a resealable bag or shallow dish. Pour the marinade over the pork, ensuring it is fully coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.
  3. Preheat the oven to 375°F (190°C). This temperature is perfect for roasting the pork.
  4. Transfer the marinated pork into a roasting pan, reserving some marinade for basting. Roast for 45-60 minutes, basting every 15 minutes with reserved marinade.
  5. Broil the pork for the last 3-5 minutes to achieve a caramelized crust. Watch carefully to avoid burning.
  6. Allow the pork to rest for 10 minutes, then slice and garnish with optional orange slices.
