Dressing
  • 1/4 cup Red Wine Vinegar Apple cider vinegar is an alternative.
  • 1/2 cup Olive Oil Vegetable oil can be used as a substitute.
  • 1 tsp Garlic Powder Minced fresh garlic can make it more intense.
  • 1 tbsp Brown Sugar A natural sweetener could be a substitute.
  • 1 tsp Kosher Salt Adjust according to taste preference.
Tortellini Version
  • 12 oz Tri-Colored Tortellini Cook and cool before adding.

Method
 

Preparation Steps
  1. In a large mixing bowl, combine shredded romaine lettuce, diced cucumber, sliced red pepper, and mild pepper rings. Fold in the salami, provolone, marinated mozzarella balls, white onion, and pepperoni.
  2. Lightly toss the salad with freshly ground black pepper and dried basil. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight.
  3. In a separate bowl, whisk together red wine vinegar, olive oil, garlic powder, additional dried basil, brown sugar, and kosher salt.
  4. Just before serving, pour the dressing over the salad and gently toss to combine.
