Cook the Noodles
- Bring a large pot of water to a rolling boil over high heat. Add rice noodles and cook for 5-7 minutes until tender. Drain and rinse under cold water.
Prepare the Peanut Sauce
- In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, and sesame oil. Add water if too thick.
Combine Noodles and Sauce
- Transfer the cooled noodles to a large bowl, pour the peanut sauce over and gently toss to coat.
Add Fresh Vegetables and Chicken
- Fold in shredded chicken, carrots, cucumbers, green onions, and cilantro. Mix gently.
Serve and Garnish
- Spoon mixture into bowls, sprinkle crushed peanuts on top, and serve chilled or at room temperature.
