Noodle Base

Peanut Sauce

  • 1/4 cup Soy Sauce Opt for gluten-free
  • 2 tbsp Rice Vinegar Can substitute with apple cider vinegar
  • 2 tbsp Honey Use maple syrup as a vegan alternative
  • 1 tbsp Sesame Oil Optional
Toppings
  • 2 cups Shredded Rotisserie Chicken Protein source; can swap for tofu, shrimp, or chickpeas
  • 1 cup Carrots Shredded or julienned
  • 1 cup Cucumbers Sliced or diced
  • 1/4 cup Green Onions Finely chopped
  • 1/4 cup Cilantro Chopped; parsley can be a substitute
  • 1/2 cup Crushed Peanuts Optional for nut-free variations

Method
 

Cook the Noodles
  1. Bring a large pot of water to a rolling boil over high heat. Add rice noodles and cook for 5-7 minutes until tender. Drain and rinse under cold water.
Prepare the Peanut Sauce
  1. In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, and sesame oil. Add water if too thick.
Combine Noodles and Sauce
  1. Transfer the cooled noodles to a large bowl, pour the peanut sauce over and gently toss to coat.
Add Fresh Vegetables and Chicken
  1. Fold in shredded chicken, carrots, cucumbers, green onions, and cilantro. Mix gently.
Serve and Garnish
  1. Spoon mixture into bowls, sprinkle crushed peanuts on top, and serve chilled or at room temperature.
