  • 1 cup Granulated Sugar or brown sugar
  • 2 large Eggs or flax eggs for vegan option
  • 2 tsp Vanilla Extract or almond extract
  • 1 cup Sour Cream or Greek yogurt, crème fraîche
  • 1 can Canned Peaches drained, or fresh/frozen
For the Glaze
  • 1 cup Powdered Sugar or coconut sugar
  • 2 tbsp Peach Juice or lemon juice, water

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a cake pan.
  2. Sift together flour, baking powder, baking soda, and salt in a bowl.
  3. Beat butter and sugar until pale and fluffy, about 2 to 3 minutes.
  4. Add eggs one at a time, then stir in vanilla extract.
  5. Fold in sour cream gently until just combined.
  6. Gradually mix dry ingredients into the wet in two batches.
  7. Fold in the drained and chopped peaches until evenly distributed.
  8. Pour the batter into the prepared cake pan and smooth the top.
  9. Bake for 35 to 40 minutes until a toothpick comes out clean.
  10. Cool in the pan for 10 to 15 minutes, then invert onto a wire rack.
  11. Whisk together powdered sugar and peach juice for glaze.
  12. Drizzle glaze over the cooled cake to serve.
