Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9"x13" baking dish.
  2. In a mixing bowl, combine strawberries, rhubarb, sugar, cornstarch, and lemon juice. Let it sit for 10 minutes.
  3. In another bowl, whisk together flour, oats, brown sugar, cinnamon, baking powder, and salt. Mix in the cold butter until crumbly.
  4. Press two-thirds of the crumb mixture into the bottom of the baking dish. Spread fruit filling evenly on top.
  5. Sprinkle remaining crumb mixture over fruit. Bake for 40-45 minutes until golden brown.
  6. Allow bars to cool completely for 1-2 hours before slicing into squares.
