- Preheat your oven to 350°F (175°C) and prepare a 9"x13" baking dish.
- In a mixing bowl, combine strawberries, rhubarb, sugar, cornstarch, and lemon juice. Let it sit for 10 minutes.
- In another bowl, whisk together flour, oats, brown sugar, cinnamon, baking powder, and salt. Mix in the cold butter until crumbly.
- Press two-thirds of the crumb mixture into the bottom of the baking dish. Spread fruit filling evenly on top.
- Sprinkle remaining crumb mixture over fruit. Bake for 40-45 minutes until golden brown.
- Allow bars to cool completely for 1-2 hours before slicing into squares.
