Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan with parchment paper.
  2. Cream the softened butter and sugar for 2-3 minutes until light and fluffy.
  3. Add eggs one at a time, then mix in sour cream, lemon zest, and vanilla until blended.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Coat the chopped rhubarb in flour mixture to prevent sinking, then set aside.
  6. Fold the dry ingredients into the wet mixture until just combined, then gently stir in rhubarb.
  7. Transfer the batter to the loaf pan, smoothing the top, and add optional rhubarb slices on top.
  8. Sprinkle sugar on top of the batter before baking for a crisp finish.
  9. Bake for 55-65 minutes, checking for doneness with a toothpick.
