Ingredients
  

Meatballs
  • 1 pound Ground Beef Can substitute with lamb, chicken, or turkey.
  • 2 cloves Garlic Minced
  • 1 small Onion Finely chopped
  • 1 cup Breadcrumbs Gluten-free if needed
  • 1 teaspoon Baking Soda
  • 2 tablespoons Fresh Herbs (Parsley, Mint, Coriander) Can use dried herbs
  • 2 tablespoons Olive Oil Extra virgin for best flavor
Roasted Potatoes
  • 2 large Fresh Potatoes Cut into wedges
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Oregano
Tzatziki
  • 1 cup Thick Greek Yogurt Can substitute with non-dairy yogurt
  • 1 small Cucumber Grated, excess moisture squeezed out
  • 1 tablespoon Lemon Juice Fresh is better
  • 1 tablespoon Fresh Dill or Mint Optional for flavor enhancement
Salad
  • 2 cups Lettuce
  • 1 cup Tomatoes Diced
  • 1 cup Cucumbers Sliced
  • 1 small Red Onion Sliced
  • 1/2 cup Olives Sliced
  • to taste Salt
  • to taste Pepper

Method
 

Meatball Preparation
  1. In a large mixing bowl, combine the ground beef, minced garlic, finely chopped onions, breadcrumbs, baking soda, fresh herbs, olive oil, salt, and pepper. Mix until well combined and refrigerate for at least 2 hours.
Cooking Meatballs
  1. Preheat your oven to 425°F (220°C). Roll the chilled mixture into small balls, about 1–1.5 inches in diameter, and place on a baking sheet.
  2. Bake for 30–40 minutes until browned and cooked through. Alternatively, pan-fry them in a skillet for 10–15 minutes.
Roasting Potatoes
  1. Cut the potatoes into wedges, toss with olive oil, cumin, paprika, oregano, salt, and pepper, then spread on a baking sheet. Roast for 40–60 minutes, flipping halfway through.
Making Tzatziki Sauce
  1. In a medium bowl, combine Greek yogurt, grated cucumber, lemon juice, and salt. Mix well and chill until ready to serve.
Assembling the Bowl
  1. Start with a base of lettuce in serving bowls. Layer with roasted potatoes, meatballs, and tzatziki sauce, then garnish with extra herbs.
