- In a large mixing bowl, combine the ground beef, minced garlic, finely chopped onions, breadcrumbs, baking soda, fresh herbs, olive oil, salt, and pepper. Mix until well combined and refrigerate for at least 2 hours.

- Cut the potatoes into wedges, toss with olive oil, cumin, paprika, oregano, salt, and pepper, then spread on a baking sheet. Roast for 40–60 minutes, flipping halfway through.
Making Tzatziki Sauce
- In a medium bowl, combine Greek yogurt, grated cucumber, lemon juice, and salt. Mix well and chill until ready to serve.
Assembling the Bowl
- Start with a base of lettuce in serving bowls. Layer with roasted potatoes, meatballs, and tzatziki sauce, then garnish with extra herbs.
