Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a baking sheet with nonstick cooking spray or line it with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, kosher salt, and ground cinnamon.
  3. In a large bowl, mix the melted unsalted butter with granulated sugar until combined. Whisk in the egg, vanilla extract, and unsweetened applesauce.
  4. Gradually fold the dry ingredients into the wet mixture until just combined, then gently fold in the diced apples.
  5. Scoop rounded portions of the batter onto the prepared baking sheet, leaving space between each scoop. Bake for approximately 10 minutes until puffed and lightly golden.
