Cooking Steps
- Cook the turkey bacon in a skillet over medium heat for 5-7 minutes until crispy. Chop into pieces.
- Sauté the chopped yellow onion in the leftover bacon grease over medium heat for 3-4 minutes until translucent.
- Whisk together eggs, milk, salt, and smoked paprika in a bowl. Pour into the skillet and scramble for 4-5 minutes until soft-set.
- Assemble burritos with cooked bacon, sautéed onions, scrambled eggs, and cheese in tortillas. Roll tightly.
- Preheat air fryer to 390°F (200°C). Air fry burritos for 5 minutes, flip, and cook for an additional 3-5 minutes until golden.
- Mix sour cream, mayonnaise, lemon juice, and basil in a bowl for the dipping sauce.
- Serve warm burritos with the prepared dipping sauce as desired.
