Ingredients

  • 1 teaspoon Salt Adjust to taste or use low-sodium.
  • 1 teaspoon Smoked Paprika Optional.
  • 2 tablespoons Butter Can replace with olive oil.
  • 1 medium Avocados Omit for a less fatty filling.
  • 1 medium Tomatoes Substitute with salsa for bolder flavor.
  • 1 cup Mexican Blend Cheese Substitute with cheddar or mozzarella.
  • 4 large Burrito Tortillas Whole wheat tortillas can be used.
Dipping Sauce
  • 1/2 cup Sour Cream Can replace with Greek yogurt.
  • 1/4 cup Mayonnaise Substitute with Greek yogurt or vegan mayo.
  • 1 tablespoon Lemon Juice Lime juice works as well.
  • 1 tablespoon Basil Omit or substitute with cilantro.

Method
 

Cooking Steps
  1. Cook the turkey bacon in a skillet over medium heat for 5-7 minutes until crispy. Chop into pieces.
  2. Sauté the chopped yellow onion in the leftover bacon grease over medium heat for 3-4 minutes until translucent.
  3. Whisk together eggs, milk, salt, and smoked paprika in a bowl. Pour into the skillet and scramble for 4-5 minutes until soft-set.
  4. Assemble burritos with cooked bacon, sautéed onions, scrambled eggs, and cheese in tortillas. Roll tightly.
  5. Preheat air fryer to 390°F (200°C). Air fry burritos for 5 minutes, flip, and cook for an additional 3-5 minutes until golden.
  6. Mix sour cream, mayonnaise, lemon juice, and basil in a bowl for the dipping sauce.
  7. Serve warm burritos with the prepared dipping sauce as desired.
