Pancake Preparation
- In a large mixing bowl, sift together the flour, cocoa powder, baking powder, and salt until well blended.
- In a separate bowl, whisk together the egg, sugar, milk, oil, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until just combined. Fold in the chocolate chips.
- For the ganache, heat the chocolate and heavy cream in a microwave-safe bowl in 20-30 second increments until melted and smooth.
- Preheat a griddle, grease lightly, then pour 1/4 cup of batter for each pancake. Cook until bubbles form, then flip and cook until golden.
- Serve the pancakes stacked with warm ganache drizzled over the top.
