Method
 

Pancake Preparation
  1. In a large mixing bowl, sift together the flour, cocoa powder, baking powder, and salt until well blended.
  2. In a separate bowl, whisk together the egg, sugar, milk, oil, and vanilla extract until smooth.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined. Fold in the chocolate chips.
  4. For the ganache, heat the chocolate and heavy cream in a microwave-safe bowl in 20-30 second increments until melted and smooth.
  5. Preheat a griddle, grease lightly, then pour 1/4 cup of batter for each pancake. Cook until bubbles form, then flip and cook until golden.
  6. Serve the pancakes stacked with warm ganache drizzled over the top.
