- In a mixing bowl, beat together cream cheese, granulated sugar, and vanilla extract until smooth. Scoop tablespoons onto a baking sheet and freeze for 1 to 2 hours.
- Cream together softened butter, granulated sugar, and brown sugar until fluffy. Add in the egg and mix well, then add vanilla extract. In another bowl, whisk together flour, baking soda, and salt; gradually mix into wet ingredients.
- Gently fold in the chocolate chips into the cookie dough.
- Preheat the oven to 350°F (175°C). Take 2 tablespoons of cookie dough, flatten it, place a cheesecake ball in the center, and cover it with more dough, sealing edges tightly.
- Bake cookies for 12-14 minutes until edges are golden but centers remain soft.
- Cool cookies on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
