Ingredients

For the Crust
  • 1 pkg Chocolate Cookies Consider using gluten-free cookies for an alternative version.
  • 5 Tbsp Butter Use unsalted for better control over flavor.
For the Peanut Butter Filling
  • 1 cup Creamy Peanut Butter Opt for natural peanut butter for the purest taste.
  • 1 cup Powdered Sugar Adjust the amount for a stronger peanut butter taste.
  • 1 tsp Vanilla Extract Use pure vanilla for the best aroma and taste.
For the Ganache
  • 1 cup Chocolate Chips Dark chocolate works beautifully for an indulgent touch.
  • 1 cup Heavy Cream Feel free to substitute half-and-half for a lighter option.

Equipment

  • Oven
  • food processor
  • Mixing Bowl
  • Electric Mixer
  • Pie Pan
  • Saucepan

Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Crush chocolate cookies in a food processor until fine crumbs form. Mix crumbs with melted butter and press into a 9-inch pie pan. Bake for about 10 minutes and cool completely.
  2. In a mixing bowl, combine creamy peanut butter, powdered sugar, and vanilla extract. Use an electric mixer to beat until smooth and creamy, about 2-3 minutes. Pour filling into cooled crust.
  3. In a saucepan, heat heavy cream until simmering, then pour over chocolate chips in a bowl. Let sit for a minute, then stir until smooth. Pour ganache over peanut butter filling.
  4. Cover the pie with plastic wrap and refrigerate for at least 2 hours to allow layers to set.
  5. Once chilled, slice and optionally top with chocolate shavings or crushed nuts. Serve alongside whipped cream or vanilla ice cream.
