- Cook the penne pasta in a large pot of salted boiling water until al dente, about 10-12 minutes. Drain and reserve a cup of pasta water.
- In a large skillet, heat olive oil over medium heat. Season chicken breast with Cajun seasoning and sear for 4-5 minutes per side until golden brown. Remove and let rest.
- In the same skillet, cook shrimp for 2-3 minutes until pink and opaque. Set aside with the chicken.
- Add andouille sausage to the skillet and sauté for 2 minutes. Then, add bell peppers, red onion, and garlic. Cook for about 4 minutes until tender.
- Pour in heavy cream and let simmer gently. Stir in Parmesan cheese until melted. Adjust seasoning as needed.
- Return chicken and shrimp to the skillet along with the drained pasta. Toss until well combined and heated through, about 1-2 minutes.
- Garnish with chopped parsley and serve immediately.
