Method
 

Step-by-Step Instructions
  1. Cook the penne pasta in a large pot of salted boiling water until al dente, about 10-12 minutes. Drain and reserve a cup of pasta water.
  2. In a large skillet, heat olive oil over medium heat. Season chicken breast with Cajun seasoning and sear for 4-5 minutes per side until golden brown. Remove and let rest.
  3. In the same skillet, cook shrimp for 2-3 minutes until pink and opaque. Set aside with the chicken.
  4. Add andouille sausage to the skillet and sauté for 2 minutes. Then, add bell peppers, red onion, and garlic. Cook for about 4 minutes until tender.
  5. Pour in heavy cream and let simmer gently. Stir in Parmesan cheese until melted. Adjust seasoning as needed.
  6. Return chicken and shrimp to the skillet along with the drained pasta. Toss until well combined and heated through, about 1-2 minutes.
  7. Garnish with chopped parsley and serve immediately.
