Preparation
- Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan.
- In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, cream together butter and sugar until light and fluffy.
- Beat in eggs one at a time, then add vanilla extract.
- Alternate adding dry mixture and buttermilk to the butter mixture until just combined.
- Pour batter into the prepared cake pan and bake for 25-30 minutes.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Puree raspberries with sugar, strain mixture to remove seeds.
- Whip heavy cream until soft peaks form, then fold in melted dark chocolate and raspberry puree.
- Slice the cooled cake in half horizontally, spread half of mousse on the bottom layer, top with second layer and remaining mousse.
- Refrigerate the assembled cake for at least 1 hour.
- To make ganache, heat heavy cream, pour over dark chocolate and stir until smooth; drizzle over the chilled cake.
