Step-by-Step Instructions
  1. In a medium bowl, whisk together Dijon mustard, honey, and apple cider vinegar. Add minced garlic, paprika, and a pinch of salt and black pepper. Mix until smooth and set aside.
  2. Pat pork chops dry, season both sides with salt and black pepper, and rest for a few minutes.
  3. In a large skillet, heat olive oil over medium-high heat. Sear pork chops for 3-4 minutes per side until golden brown.
  4. Reduce heat to medium-low, pour honey mustard sauce over pork chops. Simmer for 5-7 minutes until sauce thickens and chops reach an internal temperature of 145°F (63°C).
  5. Transfer chops to a plate, let rest for 3 minutes. Spoon thickened sauce over chops and garnish with parsley before serving.
