Ingredients
  

Sloppy Joe Filling
  • 2 tablespoons Vegetable Oil or olive oil/canola oil
  • 1 pound Lean Ground Beef (90/10) or ground turkey/chicken/lentils for vegan
  • 1 small Sweet Onion or yellow onion/shallots
  • 1 small Green Bell Pepper any bell pepper color/diced zucchini
  • 2 tablespoons Tomato Paste no direct substitute but tomato sauce can work
  • 3 cloves Garlic (minced) or 1/2 teaspoon garlic powder
  • 1 teaspoon Smoked Paprika regular paprika if smoked isn't available
  • 1 teaspoon Chili Powder substitute with taco seasoning if desired
  • 1/8 teaspoon Cayenne Pepper omit for milder dish
  • 1.5 cups Beef Stock or vegetable stock for vegetarian
  • 1 cup Ketchup try BBQ sauce or sriracha for variations
  • 2 tablespoons Dijon Mustard yellow mustard can be used
  • 2 teaspoons Worcestershire Sauce soy sauce can substitute
  • 1 tablespoon Brown Sugar adjust according to taste or omit
  • Kosher Salt & Freshly Ground Black Pepper to taste

Method
 

Steps
  1. Heat 2 tablespoons of vegetable oil in a large cast iron skillet over medium-high heat.
  2. Add 1 pound of lean ground beef into the skillet, breaking it apart as it cooks for 3-5 minutes.
  3. Stir in a diced small sweet onion and a small green bell pepper into the skillet with the beef, cooking for another 3-4 minutes.
  4. Mix in 2 tablespoons of tomato paste, 3 minced garlic cloves, 1 teaspoon smoked paprika, 1 teaspoon chili powder, and a pinch of cayenne pepper.
  5. Pour in 1.5 cups of beef stock, scraping the bottom of the skillet to lift any browned bits.
  6. Stir in 1 cup of ketchup, 2 tablespoons of Dijon mustard, 2 teaspoons of Worcestershire sauce, and 1 tablespoon of brown sugar.
  7. Bring to a gentle boil, then reduce heat to low and simmer uncovered for 15-20 minutes.
  8. Serve on soft, toasted buns after thickening.
