- Begin by chopping ripe peaches into small pieces, ensuring to remove the pits while keeping the skin on for added flavor.
- In a medium saucepan, combine your chopped peaches, 2 cups of cold water, and sugar to taste. Heat until it reaches a gentle boil, then reduce heat and simmer for about 5–7 minutes.
- Remove from heat and allow the mixture to cool down to room temperature for about 10 minutes. Then, transfer to the refrigerator to chill completely.
- Use a fine mesh sieve to strain the blend into a large bowl or pitcher. Press down gently on the pulp to extract as much liquid as possible.
- Stir in the freshly squeezed lemon juice and an additional 2 cups of cold water. Adjust sweetness by adding more sugar if desired.
