  • 2 tablespoons granulated sugar optional
  • 1 tablespoon Italian dressing mix or a homemade blend of herbs
  • ½ teaspoon black pepper freshly ground recommended
Salad
  • 24 ounces garden salad mix fresh and crisp
  • 4 whole Roma tomatoes sliced
  • 1 cup whole pepperoncini can be omitted
  • 1 cup large black olives or Kalamata olives
  • ½ cup red onion thinly sliced, optional to soak in water
  • 1 cup croutons homemade or store-bought
  • ⅓ cup grated Romano cheese or grated Parmesan

Method
 

Preparation
  1. In a medium bowl or mason jar, combine the dressing ingredients: olive oil, mayonnaise, vinegar, lemon juice, sugar, Italian dressing mix, and black pepper. Whisk or shake until smooth.
  2. In a large serving bowl, combine the salad ingredients: garden salad mix, sliced Roma tomatoes, pepperoncini, black olives, and red onion.
  3. Add croutons to the salad mixture, making sure they are evenly distributed.
  4. Drizzle the dressing over the salad mixture and toss gently to coat.
  5. Top the salad with grated Romano cheese before serving.
  6. For best results, prepare in advance but add dressing and croutons just before serving to keep freshness.
