Preparation
- In a medium bowl, combine 1 cup of all-purpose flour, 3/4 cup of brown sugar, and 1/2 cup of softened butter until crumbly.
- In another bowl, sift together 2 cups of all-purpose flour, 2 teaspoons of baking powder, and 1/2 teaspoon of salt. Stir in 1 cup of granulated sugar.
- Incorporate 1/2 cup of softened butter, blend until sandy and crumbly.
- Add 2 room-temperature eggs, 1 cup of Greek yogurt, 1/4 cup of vegetable oil, and 1 teaspoon of vanilla extract. Blend until smooth.
- Chop 2-3 peaches and toss them with 1 tablespoon of cornstarch. Fold into the batter gently.
- Pour half of the batter into a greased pan, add peaches, and cover with remaining batter. Sprinkle crumble on top.
- Preheat oven to 350°F and bake for 45-55 minutes until golden.
- While cooling, whisk together 1 cup powdered sugar, 2 tablespoons water, 1/2 teaspoon vanilla, and 2 tablespoons Greek yogurt.
- Drizzle glaze over the cooled cake, slice, and serve.
