Ingredients
  

For the Cake
  • 2 cups all-purpose flour substitute with gluten-free flour if needed
  • 2 teaspoons baking powder ensure it's fresh for best texture
  • 1/2 teaspoon salt enhances flavor
  • 1 cup granulated sugar coconut sugar can be used
  • 1/2 cup butter room temperature; margarine can be an alternative
  • 2 large eggs room temperature; flax eggs as vegan substitute
  • 1 cup Greek yogurt room temperature; can use sour cream or plant-based yogurt
  • 1/4 cup vegetable oil melted coconut oil can also work
  • 1 teaspoon vanilla extract opt for pure vanilla
  • 2-3 pieces peaches cut into small pieces
For the Topping
  • 1 tablespoon cornstarch coats peaches
  • 3/4 cup brown sugar coconut brown sugar can be used
  • 1/2 cup additional butter room temperature; margarine can be an alternative
For the Glaze
  • 1 cup powdered sugar coconut powdered sugar for twist
  • 2 tablespoons water milk could replace for richness
  • 2 tablespoons additional Greek yogurt optional for thickening

Method
 

Preparation
  1. In a medium bowl, combine 1 cup of all-purpose flour, 3/4 cup of brown sugar, and 1/2 cup of softened butter until crumbly.
  2. In another bowl, sift together 2 cups of all-purpose flour, 2 teaspoons of baking powder, and 1/2 teaspoon of salt. Stir in 1 cup of granulated sugar.
  3. Incorporate 1/2 cup of softened butter, blend until sandy and crumbly.
  4. Add 2 room-temperature eggs, 1 cup of Greek yogurt, 1/4 cup of vegetable oil, and 1 teaspoon of vanilla extract. Blend until smooth.
  5. Chop 2-3 peaches and toss them with 1 tablespoon of cornstarch. Fold into the batter gently.
  6. Pour half of the batter into a greased pan, add peaches, and cover with remaining batter. Sprinkle crumble on top.
  7. Preheat oven to 350°F and bake for 45-55 minutes until golden.
  8. While cooling, whisk together 1 cup powdered sugar, 2 tablespoons water, 1/2 teaspoon vanilla, and 2 tablespoons Greek yogurt.
  9. Drizzle glaze over the cooled cake, slice, and serve.
