Step-by-Step Instructions for Vegetarian Taco Casserole
  1. Preheat your oven to 375°F (190°C). Prepare your baking dish, which should be at least 9x13 inches.
  2. In a medium pot, combine vegetable broth, fire-roasted diced tomatoes, and optional green chiles. Bring to a boil.
  3. In your baking dish, add rinsed brown rice and dry brown lentils. Mix in the vegetarian refried beans, diced yellow pepper, and sweet onion. Season with the spices.
  4. Pour the boiling mixture over the dry ingredients in the baking dish. Stir gently to submerge the rice and lentils. Cover tightly with aluminum foil.
  5. Bake for 55 minutes. Check for doneness; if needed, cover and bake an additional 5-10 minutes.
  6. Stir the casserole to fluff it up. Top with crushed tortilla chips and Monterey blend cheese, return to oven uncovered for another 5-10 minutes.
  7. Allow to cool slightly, garnish if desired, then serve with lime wedges.
