  • 1 teaspoon toasted sesame oil essential for flavor
  • 1 teaspoon ground ginger or 1 teaspoon grated fresh ginger
  • 2 cloves garlic minced
  • 1 tablespoon rice vinegar can be omitted or substituted

For the Veggies
  • 2 cups fresh green beans or substitute with broccoli

Method
 

Step-By-Step Instructions
  1. Cut the chicken into 1-inch cubes and cook the rice or cauliflower rice according to package instructions.
  2. Steam or blanch green beans for 3-5 minutes until bright green and tender-crisp.
  3. In a large skillet, heat avocado oil over medium-high heat for 1 minute. Sauté the cubed chicken for 10-12 minutes until cooked through.
  4. In a medium bowl, whisk together the sauce ingredients until smooth.
  5. Remove the chicken from the skillet and set aside, then pour the prepared sauce mixture into the skillet.
  6. Cook the sauce for 3-5 minutes, stirring continuously until it thickens.
  7. Return the cooked chicken to the skillet, tossing until evenly coated in sauce. Cook for another 1-2 minutes.
  8. Serve the chicken with rice or cauliflower rice and green beans. Garnish with sesame seeds.
