Step-by-Step Instructions
  1. Start by rinsing the quinoa under cold water using a fine mesh strainer.
  2. Finely chop the onion, mince the garlic, dice the carrots, and chop the mushrooms.
  3. In a large pot, heat olive oil over medium heat and sauté the onions and garlic for 3-5 minutes.
  4. Stir in turmeric and mix well to infuse flavors.
  5. Add the diced carrots and chopped mushrooms, cooking for an additional 3-4 minutes.
  6. Pour in the vegetable broth and add the prepared quinoa, stirring well.
  7. Bring to a boil, then reduce heat and simmer for 15-20 minutes, stirring occasionally.
  8. Once the quinoa is cooked, stir in the kale or spinach and 2 minced garlic cloves.
  9. Season to taste with salt and pepper before serving.
