For the Creamy Dressing
  • 8 ounces Cream Cheese softened
  • 1/2 cup Mayonnaise room temperature
  • 1/2 cup Sour Cream room temperature
  • 3-4 tablespoons Pickle Juice to taste
  • 2-3 tablespoons Milk to adjust consistency
  • 1/2 teaspoon Salt to taste
  • 1/4 teaspoon Black Pepper optional garnish
  • 2 tablespoons Fresh Dill optional garnish

Method
 

Step-by-Step Instructions
  1. Begin by boiling a large pot of salted water, then add 16 ounces of rotini. Cook according to package instructions until al dente, usually about 8-10 minutes. Once done, drain the pasta and rinse it under cold water to halt the cooking process, setting it aside in a large mixing bowl.
  2. In a medium bowl, combine 8 ounces of softened cream cheese, ½ cup of mayonnaise, and ½ cup of sour cream. Add 3-4 tablespoons of pickle juice, 2-3 tablespoons of milk, and ½ teaspoon of salt. Using a hand mixer, blend the ingredients until smooth and creamy.
  3. In the large bowl with your cooled pasta, mix in 1 cup of chopped Polish ham, ¾ cup of chopped dill pickles, and ¾ cup of chopped green onions. Pour the creamy dressing over the pasta mixture, and gently fold together until evenly coated.
  4. Transfer the Ham Roll Up Pasta Salad to a serving bowl. Sprinkle additional chopped green onions, fresh dill, and a pinch of black pepper on top. Allow to sit for about 10 minutes to meld flavors, then serve chilled.
