  • 4 medium Ripe peaches Use juicy peaches for sweetness
  • 1 cup Fresh lemon juice Use freshly squeezed
  • 1 cup Truvia or stevia sweetener Sugar alternative for sweetness
  • Ice Ice Use plenty for serving
For Garnish
  • a few Fresh mint leaves Optional garnish

Method
 

Step-by-Step Instructions
  1. Wash the ripe peaches thoroughly under cold water. Cut in half and slice into wedges.
  2. In a medium saucepan, combine sliced peaches and Truvia or stevia. Add 4 cups of water.
  3. Bring the mixture to a gentle boil over medium heat.
  4. Reduce heat to low and let simmer uncovered for 5 minutes.
  5. Remove from heat and cool for at least 10 minutes.
  6. Transfer the mixture to a blender and puree until smooth.
  7. Strain the puree into a large pitcher, pressing with a spoon to extract juice.
  8. Stir in freshly squeezed lemon juice, then refrigerate for 30 minutes.
  9. Serve over ice, garnished with fresh mint leaves and peach slices.
