Step-by-Step Instructions
  1. Prepare Chicken: Butterflying the medium chicken breast ensures even cooking. Season both sides with Italian seasoning, salt, and pepper. Heat a skillet over medium-high heat with olive oil. Add the chicken, cooking for 4–5 minutes per side until golden brown and cooked through. Set aside to rest.
  2. Assemble Melts: Lower the heat and add more olive oil if needed. Place two slices of Eureka! bread in the skillet. Spread skinny chipotle sauce on each slice, then add avocado slices and the cooked chicken. Top with another slice of bread.
