- Preheat your grill to medium-high heat, around 400°F. Allow about 10-15 minutes for the grill to reach the desired temperature.
- Using a mandoline slicer or a sharp knife, slice the zucchini and summer squash into 1/8 inch ribbons.
- In a large bowl, toss the zucchini ribbons with olive oil, lemon juice, salt, and pepper.
- Thread the coated zucchini and summer squash ribbons onto skewers, weaving them with optional veggies for extra color.
- Place the assembled skewers on the grill and cook for about 10-12 minutes, turning occasionally.
- Once grilled, remove the skewers from the grill and sprinkle with grated parmesan cheese while they’re still hot.
