- Preheat your grill or grill pan to medium heat, around 350°F (175°C). Allow about 10 minutes for the grill to reach the proper heat.
- In a medium bowl, whisk together lime juice and zest, honey, and olive oil until smooth.
- Cut the watermelon into thick wedges, about 1 inch thick to hold its shape on the grill.
- Brush honey lime marinade generously over each watermelon wedge and let sit for about 5 minutes.
- Grill the marinated watermelon wedges for about 2 minutes per side until nicely charred.
- Remove from grill, sprinkle with fresh mint leaves and flaky sea salt, and serve immediately.
