Method
 

Step-by-Step Instructions
  1. Cut the green zucchini and yellow summer squash into 1-inch thick half moons or chunks.
  2. Preheat your grill to medium-high heat, aiming for about 400°F (200°C).
  3. Toss the cut squash with 1 teaspoon of kosher salt in a large bowl and let it sit for 15 minutes.
  4. After draining, pat the salted squash pieces dry with clean kitchen towels.
  5. In a skillet, heat 1 tablespoon of olive oil, then add the squash in batches, cooking for about 3-4 minutes per side.
  6. Reduce the heat to medium and add the remaining tablespoon of olive oil and minced garlic to the skillet. Sauté for about 1 minute.
  7. Pour in the balsamic vinegar, add brown sugar and optional red pepper flakes, let it simmer for about 2 minutes.
  8. Toss the seared squash in the skillet with the balsamic glaze until well-coated.
  9. Transfer the grilled summer squash to a serving platter and garnish with freshly chopped parsley.
