For the Honey Vinaigrette

  • 1 teaspoon Dijon Mustard Adds tanginess.

  • 1/4 teaspoon Pepper Adjust to taste.
For Grilling
  • 1 tablespoon Light Brown Sugar Caramelizes on peaches.
For the Finish
  • 4 ounces Blue Cheese Can be swapped for feta.

Preparation Steps
  1. Preheat your oven to 400°F (204°C). Line a baking sheet with parchment paper and lay the pancetta slices on it. Bake for about 10 minutes, flipping halfway through.
  2. While the pancetta bakes, prepare the peaches by halving and pitting them. Brush the cut sides with olive oil and sprinkle with salt and pepper. Grill the peaches, cut side down, for about 4-5 minutes until caramelized. Flip and grill for another 2-3 minutes.
  3. In a medium bowl, whisk together honey, Dijon mustard, and white wine vinegar. Slowly drizzle in the olive oil while whisking until emulsified. Season with salt and pepper to taste.
  4. In a large bowl, combine mesclun salad greens and grilled peaches. Crumble the crispy pancetta and blue cheese on top. Drizzle honey vinaigrette over the salad and toss gently. Garnish with chopped chives.
