  • 1/2 cup Red Onion Shallots can be used for a milder taste.
  • 1/2 cup Sun-Dried Tomatoes Fresh tomatoes can be substituted.
  • 1/3 cup Kalamata Olives Green olives can be used for a different flavor.
  • 1 cup Optional Fresh Spinach or Arugula Any leafy greens can work.
Seasoning
  • 2 tablespoons Olive Oil Avocado oil is an option.
  • 1 teaspoon Dried Oregano Italian seasoning can be used as an alternative.
  • to taste Salt and Freshly Ground Black Pepper Enhances all flavors.

Method
 

Step‑by‑Step Instructions
  1. Preheat a large skillet or grill pan over medium heat for about 5 minutes.
  2. Combine sliced zucchini, red bell pepper, and red onion with olive oil, salt, pepper, and oregano. Sauté for 3-4 minutes.
  3. Place the first flour tortilla in the skillet, sprinkle half of the shredded mozzarella evenly over it, and let it warm for about 1 minute.
  4. Layer the sautéed vegetables over the mozzarella, followed by sun-dried tomatoes, Kalamata olives, and crumbled feta.
  5. Top the fillings with the remaining mozzarella and place a second tortilla on top.
  6. Cook the assembled quesadilla for 2-3 minutes on each side until golden brown.
  7. Remove the quesadilla from the skillet, allow to cool slightly, then slice into wedges.
