- Preheat a large skillet or grill pan over medium heat for about 5 minutes.
- Combine sliced zucchini, red bell pepper, and red onion with olive oil, salt, pepper, and oregano. Sauté for 3-4 minutes.
- Place the first flour tortilla in the skillet, sprinkle half of the shredded mozzarella evenly over it, and let it warm for about 1 minute.
- Layer the sautéed vegetables over the mozzarella, followed by sun-dried tomatoes, Kalamata olives, and crumbled feta.
- Top the fillings with the remaining mozzarella and place a second tortilla on top.
- Cook the assembled quesadilla for 2-3 minutes on each side until golden brown.
- Remove the quesadilla from the skillet, allow to cool slightly, then slice into wedges.
