Preparation Steps
  1. Preheat your grill to medium-high heat, around 400°F (205°C). Apply a light coat of olive oil to the grates.
  2. In a large mixing bowl, combine corn, feta cheese, cilantro, green onions, and jalapeño. Squeeze lime juice over, season with salt and pepper, and toss gently. Cover and refrigerate.
  3. In a small bowl, mix together smoked paprika, chili powder, salt, garlic powder, cumin, and black pepper. Coat both sides of the flank steak generously with the spice mixture.
  4. Grill the flank steak for 3-5 minutes on each side, monitoring the internal temperature aiming for 145°F (63°C).
  5. Remove the steak from the grill, tent with foil, and let it rest for 3-5 minutes before slicing against the grain.
  6. Serve the sliced steak topped with the corn salad, enjoying the contrast of flavors and textures.
