For the Meatballs

  • 1 tsp Nutmeg
For the Dairy-Free Sauce
  • 3 tbsp Dairy-Free Butter (Miyoko's) Any plant-based butter can work
  • 1/4 cup Cassava Flour Can substitute with Arrowroot Powder
  • 2 cups Chicken or Beef Stock Use homemade for best results
  • 1 cup Coconut Cream Dairy-free sour cream can be used for richness
  • 1 tbsp Stone Ground Mustard
  • 2 tbsp Coconut Aminos Gluten-free alternative to soy sauce

Method
 

Step-by-Step Instructions
  1. In a skillet, heat 1 tablespoon of avocado oil over medium heat. Sauté 1 finely minced onion and 2 minced garlic cloves for about 5 minutes.
  2. In a bowl, combine the sautéed mixture with 1 pound of ground beef and/or ground turkey, and add preferred spices.
  3. Shape the mixture into 1-inch meatballs and place on a baking sheet lined with parchment paper.
  4. Preheat oven to 420°F (215°C) and bake meatballs for 20 minutes or until browned.
  5. While meatballs bake, melt 3 tablespoons of dairy-free butter in a saucepan, then whisk in 1/4 cup of cassava flour.
  6. Gradually add 2 cups of stock, followed by 1 cup of coconut cream, and simmer until thickened.
  7. Combine meatballs and sauce in a serving dish, toss gently, and serve immediately.
