Ingredients
  

For the Meatloaves
  • 1 pound Ground Chicken or ground turkey as a substitute
  • 1/2 cup Grated Parmesan Cheese consider using Pecorino Romano for a sharper taste
  • 1/2 cup Breadcrumbs use gluten-free breadcrumbs for a gluten-free version
  • 1/4 cup Fresh Parsley or dried Italian herbs
  • 2 cloves Garlic Cloves minced, adjust based on taste preferences
  • 1 large Egg or flax egg as a vegan substitute
  • 1 teaspoon Dried Oregano Italian seasoning can be used
  • 1 teaspoon Fine Sea Salt or kosher salt
  • 1/2 teaspoon Freshly Ground Black Pepper
  • 1/4 cup Whole Milk opt for low-fat or non-dairy milk
  • 1 tablespoon Extra Virgin Olive Oil optional, melted butter as an alternative
  • 1/2 cup Grated Mozzarella Cheese optional, cheddar can also be used

Method
 

Instructions
  1. Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.
  2. In a large bowl, mix ground chicken, Parmesan, breadcrumbs, parsley, garlic, and egg with oregano, salt, and pepper.
  3. Fold in the milk gently until the mixture is cohesive and slightly sticky.
  4. Shape the mixture into four mini loaves and place them on the baking sheet.
  5. Drizzle olive oil on top and sprinkle mozzarella cheese if desired.
  6. Bake for 25-30 minutes until golden brown and internal temperature is 74°C (165°F).
  7. Let the meatloaves rest for 5 minutes before slicing and serving.
