- Spoon the ricotta mixture onto one end of each chicken breast and roll tightly, securing with toothpicks.
- Heat olive oil in a skillet and sear the rolls for 2-3 minutes on each side until golden brown.
- Place the seared rolls in the baking dish and bake for 18-22 minutes until the internal temperature reaches 165°F (74°C).
- Let the rolls rest for about 5 minutes, then remove toothpicks, slice, and serve.
