- Wash and trim the fresh strawberries. Place in a food processor with honey and blend until smooth, about 1-2 minutes. Reserve 1/4 cup for later.
- Combine the reserved strawberry purée with Greek yogurt in a mixing bowl and stir until creamy, about 1-2 minutes.
- Transfer the mixture to a piping or zip-top bag. If using a zip-top bag, snip one corner.
- Line a sheet pan with parchment paper. Pipe small dollops of the mixture, about 1 inch in diameter.
- Freeze the bites for about 1 hour or until firm to the touch.
- Remove from the freezer and serve immediately as a snack or pack into lunchboxes.
