  • 225 g Soft Margarine or Butter Should be softened to room temperature.
  • 225 g Caster Sugar Brown sugar can be used for a deeper flavor.
  • 2 pieces Lemons, Zest Increase for a more vibrant taste.
  • 2 tsp Milk Any type of milk works.
For the Lemon Buttercream
  • 200 g Butter Ensure it’s softened for smooth blending.
  • 400 g Icing Sugar Sift to avoid lumps.
  • Lemon Juice Use freshly squeezed juice for best results.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 160ºC (or 140ºC for fan ovens) and prepare two 20cm round sandwich tins lined with baking parchment.
  2. Zest two lemons using a fine grater, ensuring you just get the yellow skin.
  3. In a large mixing bowl, sift together the self-raising flour and baking powder, then add the lemon zest.
  4. To the dry mixture, add the eggs, softened margarine, caster sugar, and milk. Beat on medium speed for 2-3 minutes.
  5. Divide the batter evenly between the two prepared tins and smooth it out with a spatula.
  6. Bake in the preheated oven for 30-35 minutes, checking doneness with a skewer.
  7. Remove from the oven and let the cakes cool for about 10 minutes before transferring to a wire rack.
  8. Once cooled, decorate with lemon buttercream if desired, spreading it generously between the layers and on top.
