- Preheat your oven to 160ºC (or 140ºC for fan ovens) and prepare two 20cm round sandwich tins lined with baking parchment.
- Zest two lemons using a fine grater, ensuring you just get the yellow skin.
- In a large mixing bowl, sift together the self-raising flour and baking powder, then add the lemon zest.
- To the dry mixture, add the eggs, softened margarine, caster sugar, and milk. Beat on medium speed for 2-3 minutes.
- Divide the batter evenly between the two prepared tins and smooth it out with a spatula.
- Bake in the preheated oven for 30-35 minutes, checking doneness with a skewer.
- Remove from the oven and let the cakes cool for about 10 minutes before transferring to a wire rack.
- Once cooled, decorate with lemon buttercream if desired, spreading it generously between the layers and on top.
