Step-by-Step Instructions
  1. Rinse the rice under cold water in a fine-mesh strainer until the water runs clear, then set aside to drain.
  2. Heat olive oil in a medium saucepan over medium heat, add chopped onion, and sauté until translucent, about 4-5 minutes.
  3. Add minced garlic and stir for about 1 minute until fragrant.
  4. Toast the rinsed rice in the pan for about 2-3 minutes, coating with onion and garlic.
  5. Pour in broth, lemon zest, lemon juice, oregano, salt, and pepper; stir and bring to a boil.
  6. Reduce heat to low, cover, and let simmer for 15-20 minutes.
  7. Once done, remove from heat and let the rice sit covered for 5 minutes.
  8. Fluff the rice with a fork and garnish with fresh parsley before serving.
