  • 4 pieces Boneless, Skinless Chicken Breasts 1/2 inch thick
For the Coating
  • 1 cup All-Purpose Flour or gluten-free flour
  • 2 large Eggs beaten
  • 1 cup Plain Breadcrumbs or gluten-free breadcrumbs
For Frying
  • ¼ cup Avocado Oil or neutral oil

  1. Prepare the chicken by pounding it to 1/2-inch thickness.
  2. Make the garlic butter filling by mixing all filling ingredients in a bowl.
  3. Fill and fold the chicken to enclose the garlic butter filling.
  4. Dredge the chicken in flour, eggs, and breadcrumbs.
  5. Heat oil in a skillet until hot.
  6. Fry the chicken until golden brown, about 4-5 minutes per side.
  7. Bake the chicken in the oven at 400°F for 25-30 minutes until fully cooked.
  8. Serve the chicken after resting for a few minutes.
