Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. Slice chicken breasts, bell peppers, and onion into thin strips and set aside.
  3. Warm olive oil in a skillet over medium-high heat, add chicken, and sauté until lightly browned for about 5–7 minutes.
  4. Add bell peppers and onion to the skillet; cook for an additional 5 minutes until softened.
  5. Sprinkle taco seasoning and drizzle lime juice over the mixture; cook for another 1–2 minutes.
  6. In a bowl, combine cream cheese and sour cream until smooth.
  7. Spread the chicken and vegetable mix in the greased baking dish and dollop the creamy mix on top.
  8. Sprinkle shredded cheddar cheese generously over the casserole.
  9. Bake for 20–25 minutes until the cheese is melted and golden brown.
  10. Let it rest for a few minutes, garnish with cilantro or lime wedges before serving.
