  • 1 medium red onion shallots or green onions can substitute
  • 1 tablespoon grated ginger fresh ginger is best, powdered can work

Method
 

Preparation
  1. Trim excess fat from the chicken thighs and pat dry with paper towels. Chop into bite-sized pieces.
  2. In a bowl or bag, whisk together soy sauce, sesame oil, honey, and brown sugar. Add garlic, ginger, salt, and pepper.
  3. Add chicken to the marinade and coat evenly. Seal and refrigerate for 3-4 hours.
  4. Preheat oven to 425°F. Place cast iron skillet in the oven for about 5 minutes.
  5. Arrange marinated chicken in a single layer in the hot skillet and bake for 25-30 minutes, basting every 5-10 minutes.
  6. Check chicken with a thermometer for 165°F. Optionally, broil for 2-3 minutes for caramelization.
  7. Let chicken rest for a few minutes, then garnish with sesame seeds and green onions. Serve with lettuce wraps or cucumber salad.
