Preparation
- Trim excess fat from the chicken thighs and pat dry with paper towels. Chop into bite-sized pieces.
- In a bowl or bag, whisk together soy sauce, sesame oil, honey, and brown sugar. Add garlic, ginger, salt, and pepper.
- Add chicken to the marinade and coat evenly. Seal and refrigerate for 3-4 hours.
- Preheat oven to 425°F. Place cast iron skillet in the oven for about 5 minutes.
- Arrange marinated chicken in a single layer in the hot skillet and bake for 25-30 minutes, basting every 5-10 minutes.
- Check chicken with a thermometer for 165°F. Optionally, broil for 2-3 minutes for caramelization.
- Let chicken rest for a few minutes, then garnish with sesame seeds and green onions. Serve with lettuce wraps or cucumber salad.
