Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with cooking spray.
- In a large skillet over medium heat, combine the ground beef and diced onion. Cook until the beef is browned and the onion is softened, about 6-8 minutes.
- Add the minced garlic, taco seasoning, Rotel diced tomatoes, black beans, and corn. Stir and simmer for 3-4 minutes until aromatic.
- Reduce the heat to low and fold in the cream cheese and sour cream until smooth.
- Spread half of the crushed Doritos in the baking dish, layer half of the beef mixture, and half of the cheeses. Repeat the layers.
- Bake for 20-25 minutes until the cheese is melted and bubbly.
- Allow the casserole to rest for 5 minutes. Top with diced tomatoes, cilantro, and jalapeños before serving.
