Ingredients
  

Casserole Base
  • 1 pound Ground Beef Can substitute with ground turkey
  • 1 Onion Use shallots for a milder flavor
  • 2 cloves Garlic
  • 1 packet Taco Seasoning Adjust spice levels to taste
  • 1 can Rotel Diced Tomatoes with Green Chiles Can substitute with diced tomatoes and cayenne
  • 1 can Black Beans Rinse to reduce sodium
  • 1 cup Corn Fresh corn can be used instead of canned
Creamy Mixture
  • 8 ounces Cream Cheese
  • 1 cup Sour Cream Greek yogurt can be a lower-fat alternative
Cheesy Topping
  • 2 cups Shredded Cheddar Cheese
  • 2 cups Shredded Monterey Jack Cheese Can use mozzarella for a different texture
Crunchy Layer
  • 1 bag Nacho Cheese Doritos Can use other varieties based on preference
Fresh Finish
  • 1 Diced Tomatoes
  • 0.5 cup Cilantro Omit if not a fan
  • 1 Jalapeños Optional for added heat

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with cooking spray.
  2. In a large skillet over medium heat, combine the ground beef and diced onion. Cook until the beef is browned and the onion is softened, about 6-8 minutes.
  3. Add the minced garlic, taco seasoning, Rotel diced tomatoes, black beans, and corn. Stir and simmer for 3-4 minutes until aromatic.
  4. Reduce the heat to low and fold in the cream cheese and sour cream until smooth.
  5. Spread half of the crushed Doritos in the baking dish, layer half of the beef mixture, and half of the cheeses. Repeat the layers.
  6. Bake for 20-25 minutes until the cheese is melted and bubbly.
  7. Allow the casserole to rest for 5 minutes. Top with diced tomatoes, cilantro, and jalapeños before serving.

Notes

Add crushed Doritos just before baking to maintain crunch. Drain excess fat after cooking meat to avoid greasiness.
