Step-by-Step Instructions
  1. In a medium saucepan over medium-high heat, combine 1 liter of water with 1.25 cups of fresh blueberries and 1 heaping tablespoon of grated ginger. Stir gently as it heats for about 5 minutes.
  2. Once it comes to a gentle boil, add 4-5 tablespoons of sugar. Stir until fully dissolved, about 2 minutes.
  3. Lower heat to medium-low, mash blueberries lightly, and simmer for 10-15 minutes, stirring occasionally.
  4. Remove from heat and cover, allowing the syrup to steep at room temperature for 2-3 hours.
  5. Strain the syrup through a fine mesh sieve into a bowl, discarding the solids.
  6. To serve, fill glasses about two-thirds full with syrup, add ice cubes, top with 2-3 cans of sparkling water, and stir gently.
  7. Garnish with fresh blueberries and mint leaves before serving.
