- Preheat your oven to 350°F (175°C) and prepare two baking sheets by lining them with parchment paper or silicone liners.
- In a large mixing bowl, whisk together all-purpose flour, baking powder, and salt. Then add rolled oats and stir until well combined.
- In a separate bowl, cream together softened unsalted butter and light brown sugar using an electric mixer until light and fluffy.
- Mix in apple butter until smooth, then add the egg and vanilla extract, continuing to beat until well incorporated.
- Gradually mix the dry ingredients into the wet mixture until just combined. Fold in chopped nuts.
- Drop rounded balls of dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie.
- Bake the cookies for 10 to 12 minutes, until edges are lightly golden and centers appear set.
- Remove from oven and let cool on the baking sheets for about 5 minutes before transferring to a wire rack to cool completely.
