Method
 

  1. Preheat your oven to 350°F (175°C) and prepare two baking sheets by lining them with parchment paper or silicone liners.
  2. In a large mixing bowl, whisk together all-purpose flour, baking powder, and salt. Then add rolled oats and stir until well combined.
  3. In a separate bowl, cream together softened unsalted butter and light brown sugar using an electric mixer until light and fluffy.
  4. Mix in apple butter until smooth, then add the egg and vanilla extract, continuing to beat until well incorporated.
  5. Gradually mix the dry ingredients into the wet mixture until just combined. Fold in chopped nuts.
  6. Drop rounded balls of dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie.
  7. Bake the cookies for 10 to 12 minutes, until edges are lightly golden and centers appear set.
  8. Remove from oven and let cool on the baking sheets for about 5 minutes before transferring to a wire rack to cool completely.
