- Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish with olive oil.
- In a large skillet, add olive oil, onion, and red bell pepper. Sauté for about 5 minutes until softened.
- Add shredded chicken, enchilada sauce, cumin, chili powder, garlic powder, salt, and pepper to the skillet. Stir and cook for 3 minutes.
- Spread a thin layer of the chicken mixture at the bottom of the greased baking dish.
- Layer half of the tortilla strips, followed by half of the black beans, corn, and cheese.
- Repeat with the remaining chicken mixture, another layer of tortilla strips, black beans, corn, and cheese.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes.
- Allow the casserole to cool for a few minutes and garnish with chopped cilantro.
- Serve hot, with optional sour cream and lime wedges.
