Step-by-Step Instructions
  1. In a medium bowl, combine Greek yogurt, half a diced cucumber, olive oil, lemon juice, minced garlic, dried dill, and a pinch of salt and pepper. Mix until smooth and creamy. Set aside.
  2. Season chicken breasts with salt and pepper on both sides. Preheat grill to medium heat. Cook chicken for 7-10 minutes on each side until internal temperature reaches 165°F. Transfer to a cutting board to rest before slicing.
  3. In a large mixing bowl, add sliced grilled chicken, halved cherry tomatoes, diced bell peppers, and sliced red onion. Toss gently to distribute the ingredients evenly.
  4. Pour the tzatziki sauce over the salad mixture and toss gently to combine.
  5. Cover the bowl and chill in the refrigerator for about 10 minutes to intensify flavors.
  6. Garnish with chopped parsley before serving. Enjoy chilled or with pita bread.
