- In a large mixing bowl, combine ground turkey, breadcrumbs, chopped green onions, cilantro, minced garlic, and grated ginger. Pour in soy sauce, lime juice, sesame oil, and season with salt and pepper. Gently mix until just combined, avoiding overmixing to keep the patties juicy after cooking.
- Divide the turkey mixture into four equal portions, about ¾ inch thick. Form each portion into patties, ensuring to create a slight indentation in the center of each patty to help them cook evenly without puffing up.
- Preheat your grill or skillet over medium-high heat, allowing it to warm for a few minutes. If using a skillet, add a drizzle of oil to prevent sticking.
- Place the shaped patties on the hot grill or skillet, cooking for 5-6 minutes on each side. Look for a golden-brown crust and ensure the internal temperature reaches 165°F (74°C).
- While the patties are cooking, whisk together creamy peanut butter, soy sauce, lime juice, honey, and sriracha in a small bowl. Adjust thickness with warm water if needed.
- Once the patties are cooked, spread a layer of peanut sauce on the bottom half of each burger bun. Layer a cooked patty on top, drizzle more peanut sauce, and add shredded carrots, cucumber slices, fresh cilantro leaves, and red onion.
